Christmas Ginger Cookies
Delicious, original, easy, and festive! I consider these Christmas ginger cookies one of my best. The dough is wonderfully aromatic, yet much simpler to make than classic gingerbread. They look just as impressive - you can even use them to decorate a New Year tree!

Preparation
Step 1
How to bake Christmas ginger cookies? Prepare the ingredients. You can use butter straight from the fridge. Use runny honey, or replace it with molasses. All spices should be ground; you can also use a ready gingerbread spice mix.
Step 2
In a thick-bottomed saucepan, combine white sugar, brown sugar, honey, and water. Stir constantly and bring to a boil, then remove from the heat. Both sugars should dissolve completely.
Step 3
Add all the spices, butter, and baking soda to the hot sugar mixture. The color will change slightly. Stir until everything dissolves. Cool the mixture to room temperature. In the next step, add the flour in portions, watching the dough consistency - you may need more or less flour than I did.
Step 4
Add flour to the cooled mixture and knead the dough. Form it into a ball. It comes together easily if you transfer it between your hands, but it’s sticky and hard to handle. Wrap in plastic wrap and refrigerate overnight, or at least 3 hours. You can keep this dough in the fridge for several days for later use. Remove the chilled dough from the fridge. Preheat the oven to about 170°C / 338°F.
Step 5
Pinch off pieces of dough and place each one on baking parchment. Cover with a second sheet and roll the dough between the two sheets. Roll into a very thin layer, remove the top sheet, and cut out shapes with cookie cutters. Remove the scraps. Transfer the parchment with the cookies to a baking sheet and bake in the preheated oven for about 5-10 minutes (adjust to your oven).
Step 6
Remove the baked cookies from the paper and let cool. They turn very crisp (if the dough was rolled thin). Serve with tea, milk, hot chocolate, or warm spiced drinks. Stored in an airtight container, these cookies keep well for many days.
