Choux Pastry Dumplings with Potato and Liver

Preparation
Step 1
Prepare the ingredients and seasonings for tasty dumplings made with choux dough.
Step 2
Pour 250 ml boiling water (about 1 cup + 1 Tbsp) into a large bowl and add 1 tsp salt.
Step 3
Add 2 Tbsp vegetable oil and mix everything.
Step 4
Add most of the 500 g all-purpose flour (about 4 cups) and mix well.
Step 5
Add 1 egg and mix everything well again.
Step 6
Add the remaining flour to the bowl.
Step 7
Mix thoroughly and knead the dough.
Step 8
Continue kneading the dough by hand in the bowl.
Step 9
Gather the kneaded dough into a ball.
Step 10
Put the dough into a plastic bag and set aside for 30 minutes.
Step 11
In a skillet with a little vegetable oil, add a finely chopped onion and sauté, stirring, over high heat.
Step 12
Cut 500 g beef liver (about 1.1 lb) into random pieces.

Add the liver pieces to the skillet with the onion.

Sauté, stirring, until golden, about 10 minutes.
Step 15
Add salt to taste, a pepper mix, and ground nutmeg. Lower the heat and stir everything together.

Cover the skillet with a lid and cook the liver for 5-7 minutes more.

Grind the fried liver and 400 g boiled potatoes (about 14 oz / ~3 medium potatoes) through a meat grinder into a bowl.

Mix everything well - the dumpling filling is ready.

After the resting time, place the dough in portions on a work surface lightly dusted with flour and roll it out into thin rounds.

Using a cutter of a suitable size, cut out dumpling rounds and place the needed amount of filling on each one.

Seal the edges well.

Shape the dumplings to the desired size.

Place the needed number of dumplings into a pot of boiling water and stir. After the water returns to a boil, cook for about 3-5 minutes until done.

Transfer the cooked dumplings from the pot to a plate.
