Choux Pastry Cookies
Light and simple, made from budget-friendly ingredients, and suitable for any filling! Choux pastry cookies are incredibly delicious. They can be filled with custard, buttercream, cream, meringue, cottage cheese cream, dulce de leche, chocolate glaze, jam, fresh berries, and fruit. The filling can even be savory.

Preparation
Step 1
How do you make choux pastry cookies? Prepare the ingredients. Sift the wheat flour into a deep bowl. This will enrich it with oxygen, which helps the baked goods turn out fluffier and airier.

Pour the water into a heavy-bottomed saucepan, add the butter and sugar, and bring to a boil.
Step 3
Add all the flour at once in one motion and begin stirring vigorously. Stir until the dough comes together into one ball. Leave the dough like this and let it cool until warm. This will take about 10 minutes. To speed up the cooling process, you can place the saucepan with the dough into a basin of cold water.
Step 4
As soon as the dough has cooled, start adding the eggs one at a time. Crack in one egg and begin mixing it into the dough with active movements. Be patient and keep stirring until the egg is fully incorporated into the dough. Then crack in the next egg and continue stirring. Mix in 3 eggs this way and watch the consistency of the dough.
Step 5
The finished dough should be smooth and fall from the spatula in a ribbon, forming a triangle. If the dough is still too stiff, take the fourth egg, crack it into a bowl, beat it well with a fork, add one-third of the egg to the dough, mix, and check the consistency. If needed, add another third of the egg and mix again. I needed 3 1/2 eggs.
Step 6
Transfer the dough to a piping bag. I used a closed star tip. If you do not have a piping bag, use a sturdy plastic bag, put the dough into it, and cut off a corner about 1 centimeter (about 3/8 inch) wide. You can also use a spoon: pipe or place the future cookies onto a baking sheet lined with parchment paper. I got 16 cookies about 5 centimeters (about 2 inches) in diameter.
Step 7
Bake in a preheated oven at 200°C (400°F) for about 10-15 minutes. Then reduce the temperature to 170°C (340°F) and bake for another 10-25 minutes. You may need slightly more or less time, so use your oven as a guide. The finished cookies should be golden brown, airy, and easy to remove from the parchment. They should have a crust on the outside and be hollow inside. All that remains is to choose the filling, dust with powdered sugar, and enjoy. Enjoy your meal!
