Choux Pancakes with Meat Filling

Preparation
Step 1
First, prepare all the necessary ingredients at room temperature along with spices for delicious homemade stuffed pancakes.
Step 2
For the batter, take a large bowl, crack in three eggs, then add one-third teaspoon of salt and one tablespoon of sugar. Whisk until smooth.
Step 3
Add two tablespoons of melted butter and mix well.
Step 4
Pour in one-third of the warm milk (from the total amount) and mix until combined.
Step 5
Sift 300 g (about 2½ cups) of premium wheat flour through a fine sieve and add it to the bowl.

Stir everything thoroughly until a smooth batter forms.

Pour in the remaining warm milk and mix again until the batter is uniform.
Step 8
Gradually pour in 300 ml (1¼ cups) of boiling water while stirring to scald the batter. Let it rest for 30 minutes.

Start preparing the filling. Heat a frying pan and add 600 g (about 1¼ lb) of mixed minced meat. Fry over high heat.

Finely chop one large onion and add it to the pan. Stir and cook over high heat until the onion becomes translucent.

Add dried herbs, salt, coriander, and ground pepper to taste, then mix in 150 g (¾ cup) of pre-cooked rice.

Stir well, cover with a lid, and cook the filling for 12 minutes over low heat.

Remove from heat and let the meat and rice filling cool slightly.

Add two tablespoons of vegetable oil to the batter and mix well.

Heat a lightly oiled pan and pour in enough batter to form a thin layer. Cook the pancakes over high heat until golden on both sides.

Place the cooked pancakes on a plate. Put one tablespoon of the meat filling onto each pancake.
