Chopped Pork Schnitzel

Juicy and tender inside, with a golden, crispy crust! Chopped pork schnitzel is more succulent and soft than the classic whole-cut version. A great addition to everyday meals and a festive table centerpiece.

Preparation
Step 1
In addition to the listed spices, you can add your own to taste, such as paprika, khmeli-suneli, dried herbs, etc. If using pre-mixed spice blends, keep in mind they often already contain salt and pepper, so be careful not to overseason.
Step 2
If you have a whole piece of pork, slice it thinly. Then tenderize the slices using a meat mallet.
Step 3
Cut the tenderized pork slices into thin strips. Then chop those strips into small cubes.
Step 4
Place the chopped pork into a plastic bag. Add flour and spices. Shake the bag well to evenly coat the meat with flour and spices.
Step 5
Transfer the seasoned pork into a mixing bowl. Add one egg and mix thoroughly. The resulting mixture should be sticky enough to form schnitzels without falling apart. If needed, add a bit more flour.
Step 6
Shape the mixture into palm-sized oval schnitzels. Coat them well on all sides in breadcrumbs.
Step 7
In a skillet over medium heat (I used setting 6 out of 9), heat vegetable oil and fry the schnitzels for 5-7 minutes on each side until golden brown.
Step 8
Transfer the cooked schnitzels to a plate and serve with any side dish. Enjoy your meal!
