Preparation
Step 1
Bring a saucepan of water to the boil, then lower the heat so it gently simmers. Place a heatproof bowl on top, ensuring the base doesn’t touch the water, and add the chopped chocolate. Let it melt slowly, stirring occasionally, until smooth and silky. Remove the bowl from the heat.
Step 2
In a separate saucepan over medium heat, bring the cream, milk, and sugar to the boil, whisking constantly. Gradually pour the hot cream mixture into the melted chocolate, whisking continuously until the sauce is perfectly smooth and fully combined.
