Step 1
How do you make chocolate oatmeal cookies? Prepare the ingredients. It’s best to use quick-cooking oats-they soften and won’t be tough. Take the butter out of the fridge in advance; it should be soft. The recipe is designed for chocolate chips, but you can use regular dark chocolate. Don’t be surprised by the salt - it enhances the chocolate flavor. Use good-quality cocoa powder with no additives.
Step 2
In a large bowl, add flour and cocoa powder sifted through a sieve. This aerates the flour and breaks up any lumps of flour and cocoa. Add cinnamon, baking powder, and a pinch of salt. Mix all the dry ingredients.
Step 3
In another bowl, combine the softened butter and sugar. Mash/mix until smooth. You don’t need a mixer - use a silicone spatula. The goal is not to whip, just to mix well.
Step 4
Add the eggs to the butter mixture, one at a time, mixing well after each addition.
Step 5
Pour the wet mixture into the dry ingredients and mix.
Step 6
If you’re using a chocolate bar instead of chips, chop it into small pieces. You can use milk chocolate instead of dark if you prefer.

Add the chocolate and the oats to the dough. Mix. You’ll get a fairly thick, uniform mixture. Chill the dough for 30 minutes so the butter firms up a bit - this makes the cookies easier to shape. Because flour varies by brand, you may need a little more or less; aim for your desired dough consistency.
Step 8
Line a baking sheet with baking paper. Shape the dough into round cookies and place them on the sheet, leaving space between them - the cookies will spread as they bake. Lightly flatten each cookie on top. I got 11 cookies.
Step 9
Preheat the oven to 180°C / 356°F (top and bottom heat). Bake for about 15 minutes. The time is approximate - adjust to your oven. The homemade oatmeal cookies with chocolate pieces are ready! Remove them from the paper and cool on a rack. Enjoy!
