Chocolate Muffins in Silicone Molds

Tender, soft, aromatic, and delicious! Super chocolatey! These chocolate muffins are conveniently portioned in silicone molds. They bake evenly, turn out soft and airy, with an incredibly rich chocolate flavor. Chocolate lovers will definitely adore them - truly chocolate in chocolate!

Preparation
Step 1
Take the butter out of the fridge in advance so it becomes soft. Instead of vanilla sugar, you can use vanilla extract. For a richer chocolate flavor, use chocolate with at least 50% cocoa.
Step 2
Mix flour with baking powder and sift it. Sifting adds air, helping muffins rise and become airy. If using vanilla extract, add it to the flour mixture.
Step 3
Brew 100 ml of cocoa with boiling water, stirring until smooth and lump-free.

Add the remaining 100 ml water to the cocoa to bring it to room temperature.

Using a mixer, beat the soft butter with sugar, vanilla sugar, and salt until fluffy.

Add eggs one by one to the butter mixture, beating well after each addition.

Beat until smooth and uniform.
Step 8
Pour in the prepared cocoa mixture and beat again.

Gradually add the sifted flour with baking powder to the mixture.

Beat on low speed until you get a thick, uniform batter. Do not overmix.

Fill silicone molds with chocolate batter about 1/3 full.

Place a piece of chocolate in the center of each mold.

Cover with more batter until molds are about 2/3 full.

Bake in a preheated oven at 180°C (355°F) for about 30 minutes. Test with a toothpick - if it comes out clean, muffins are done. Adjust baking time to your oven. Cool slightly, remove from molds, and let fully cool. Yields about 15 small muffins.

Prepare chocolate glaze.

Heat butter with milk until hot, either on the stove or in the microwave.

Add chocolate pieces to the hot milk mixture and stir until fully melted.

You will get a smooth, glossy chocolate glaze.

Dip each muffin in the glaze and leave for 15-20 minutes to set slightly.

Optionally, decorate the muffins before serving. I used white chocolate and mint leaves. Enjoy!
