Chocolate Lava Cake (Molten Chocolate Fondant)
Very quick, insanely delicious, inexpensive, and original! You can make chocolate fondant with a molten center in under 30 minutes. Serve this hot dessert with a scoop of creamy ice cream to fully enjoy its taste. A perfect treat for romantic evenings!

Preparation
Step 1
How to make chocolate fondant with a molten center? Easy, quick, and simple. First, prepare the ingredients. Use large eggs. Choose good-quality chocolate with at least 70% cocoa. Use all-purpose flour (preferably high-grade).
Step 2
Melt the chocolate in a double boiler or in the microwave. Stir occasionally so it melts evenly and doesn’t stick. Good chocolate will become smooth, glossy, and uniform.
Step 3
Melt the butter as well, then let it cool slightly.
Step 4
Pour the still-warm melted butter into the chocolate.
Step 5
Mix well until smooth. The mixture should be glossy and silky.
Step 6
In a separate bowl, combine the eggs, sugar, and salt. Beat with a mixer until fluffy and smooth. It’s important that the sugar and salt dissolve; otherwise they sink to the bottom and weigh down the batter. The mixture should lighten in color and keep lots of bubbles on the surface.

Add the chocolate-butter mixture to the whipped eggs and beat again until smooth.
Step 8
Sift the flour with the baking powder and add it to the chocolate mixture. You may need a little more or less flour - go by the batter consistency.

Fold the batter with a silicone spatula. It should be uniform, thick, and glossy, but not overly dense.
Step 10
Grease the muffin molds thoroughly with butter (even if they’re silicone).
Step 11
Fill the molds with the chocolate batter. My batter was enough for exactly 6 molds.

Bake in a preheated oven at 200°C / 392°F for 8-9 minutes. The exact time depends on your oven. Don’t stray far - one extra minute can set the center, turning it from molten to very thick or fully baked. When the tops puff slightly like little caps, remove from the oven and let cool briefly in the molds.
Step 13
Transfer the fondants to a serving plate and serve immediately, garnished with berries and mint. If you like, serve with a scoop of vanilla ice cream. Enjoy!
