Preparation
Step 1
How do you make chocolate lava cake? Prepare and measure the ingredients. Use only good-quality chocolate and butter - the dessert’s flavor depends on them.
Step 2
Put the chocolate (broken into pieces) and the butter into a bowl. Set a pot of water on the stove to heat - we’ll use a double boiler. This means placing the bowl with the chocolate over the pot of simmering water. Choose a suitable, non-plastic bowl. The water should not touch the bottom of the bowl. Melt the chocolate and butter, stirring with a spatula, until smooth.
Step 3
While the chocolate is melting, beat the eggs with the sugar. Beat with a mixer until the mixture becomes pale and fluffy.
Step 4
Add the sifted flour to the beaten eggs and mix gently. You may need a little less or more flour - go by the batter consistency.
Step 5
Add the melted chocolate. It should cool slightly but not become cold. Whisk gently until smooth.
Step 6
Grease the pan(s) you’ll bake the fondants in with butter. If the molds aren’t silicone but metal, dust the butter with flour or cocoa and shake off the excess. Divide the batter evenly among the molds. The cakes won’t rise much, so you don’t need to leave a lot of headspace.
Step 7
Preheat the oven to 180°C (356°F). Bake the fondants. I baked mine for 8 minutes, but you may need a bit less or more. A thin crust should form on top, with small craters. I don’t recommend baking longer, or the center won’t stay molten. Judge by your oven and the cakes’ appearance. Remove the fondants and serve. Enjoy!
