Preparation
Step 1
Place the chocolate and butter in a heatproof bowl and set aside.

Pour the cream into a saucepan, add the sugar, and bring to the boil, stirring occasionally. Remove from the heat, let it cool for 30 seconds, then pour the hot cream over the chocolate and butter. Allow it to sit for 1 minute without stirring to melt the chocolate gently.
Step 3
Stir slowly in one direction with a wooden spoon or rubber spatula until the mixture becomes smooth and glossy. Leave the ganache to cool and thicken slightly before using.
