Step 1
Set a sieve over a large mixing bowl and sift together the flour, cocoa powder, bicarbonate of soda, and salt.
Step 2
In a separate bowl, combine the mashed banana, honey, melted butter, and vanilla extract. Stir the banana mixture into the dry ingredients until fully incorporated, then fold in the chocolate chunks. Chill the dough in the fridge for up to 30 minutes.
Step 3
Preheat the oven to 190C and line a baking tray with greaseproof paper.
Step 4
Drop walnut-sized portions of dough onto the prepared tray, spacing them about 2.5cm/1in apart. Bake for 10 minutes, or until the cookies are just set. Leave them to cool for 2 minutes on the tray before transferring to a wire rack to cool completely.
