Preparation
Step 1
How to cook homemade cocoa frosting for coating a cake? Prepare the ingredients. Use natural, high-quality cocoa powder without sugar or additives. Choose real, high-quality butter with 82.5% fat. You can use cream instead of milk for a richer, creamier glaze. For aroma, add a pinch of vanilla powder, and to boost flavor add a tiny pinch of salt. Take the butter out of the fridge in advance so it softens.
Step 2
Take a saucepan with a thick bottom and add the cocoa and sugar. Mix the dry ingredients. This is easier if you sift the cocoa first.
Step 3
Pour the milk into the saucepan and whisk until smooth. Cocoa is hard to dissolve in cold liquid, so the frosting needs a brief heating step.
Step 4
Place the saucepan over low heat and, stirring constantly, bring the frosting to a smooth, uniform consistency. Do not bring it to a boil to avoid forming foam.
Step 5
Remove the saucepan from the heat and cool the frosting to room temperature. Add the butter. Don’t add it to hot milk - the frosting will become very runny and you’ll have to wait for it to cool. Whisk the butter in thoroughly.
Step 6
The cocoa-and-milk frosting will become smooth and even. You can pour it over pastries and desserts. If it turns out too thin, place it in the refrigerator - once the butter chills, the frosting will thicken. You can also add 1 teaspoon of flour while cooking.
