Chocolate chip muffins

Preparation
Step 1
Preheat the oven to 200C. Grease a 12-hole muffin tin and line it with paper cases.
Step 2
Sift the flour and cocoa powder into a large mixing bowl, then add the sugars, baking powder, and salt, stirring until well combined. Make a well in the centre of the dry ingredients.
Step 3
In a separate bowl, whisk together the eggs, buttermilk, vanilla extract, and hot water. Pour this mixture into the well and quickly blend it into the dry ingredients using a spatula. Stir in the melted butter, followed by most of the chocolate chips.
Step 4
Spoon the batter evenly into the paper cases, filling each about three-quarters full. Sprinkle the remaining chocolate chips over the tops. Bake for 18-20 minutes, or until the muffins are well risen and cooked through.
Step 5
Let cool slightly before serving warm for an irresistibly soft and gooey chocolate experience.
