Easy
About 20 min.
Preparation
Step 1
Preheat the oven to 190C.
Step 2
In a medium bowl, mix together the flour, baking soda, and salt. In a separate large bowl, beat the butter, sugar, brown sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Gradually incorporate the dry ingredients into the butter mixture until fully combined, then stir in the chocolate pieces.
Step 3
Divide the dough into two equal portions and shape each into a log about 5cm/2in in diameter. Wrap tightly in cling film and chill in the refrigerator until firm or ready to use.
Step 4
When ready to bake, slice the dough logs into rounds about 2cm/¾in thick and place them well spaced apart on a baking tray. Bake for 9-11 minutes, until the edges are golden brown but the centres remain soft. Leave the cookies to cool on the tray for a few minutes before transferring them to a wire rack.
Step 5
Serve warm for the best texture - ideally with a glass of ice-cold milk.
