Chocolate Cake in the Oven

Preparation
Step 1
Use premium flour. Take large, selected eggs.

In a saucepan, combine butter, milk, and sugar. Heat over medium heat until the butter is fully melted. If you wish, you can replace sugar with a heat-stable sugar substitute.

Add cocoa powder to the saucepan and stir. While stirring, bring the mixture almost to a boil, but do not let it boil.

Remove the saucepan from the heat and let the mixture cool.

Into the cooled chocolate mixture, add the eggs one by one, beating well after each addition. It’s very important to whisk the eggs thoroughly - this ensures the cake will rise and be airy. Alternatively, you can first beat the eggs until fluffy and then add the chocolate-butter mixture.

The resulting mixture should be airy with lots of bubbles.

Gradually add sifted flour mixed with vanilla and baking powder. Beat the batter with a mixer until smooth. Can you replace baking powder with baking soda? Not in this recipe, because there’s no acidic medium for soda to react with. Baking powder is enough. You may need slightly more or less flour depending on the consistency.

The batter should be flowing, of medium thickness, similar to pancake batter. If needed, add a little more flour.
Step 9
Grease a bundt pan (with a hole in the middle) with vegetable oil and sprinkle with flour. Pour in the batter, rotating the pan in circles a few times to distribute evenly. Place in a preheated oven at 350°F (180°C) and bake for 45-55 minutes, until a toothpick comes out dry. Time may vary depending on your oven.
Step 10
Transfer the baked cake to a serving plate and let it cool.

While the cake cools, prepare the glaze. You can make any glaze of your choice.

In a saucepan, combine chopped chocolate, cocoa, sugar, and milk.

Heat over low heat, stirring, until the sugar and chocolate dissolve and you get a semi-thick smooth glaze. Adjust consistency by adding more milk or cocoa.

Pour the warm chocolate glaze over the cake. Decorate with berries and mint, then serve. Enjoy!
