Chocolate Brownie Cookies

Step 1
How to bake chocolate brownie cookies? Very easy and quick. First, prepare all the listed ingredients. Use top-grade flour, high-quality cocoa (preferably alkalized), a large egg, and dark chocolate with at least 72% cocoa.
Step 2
In a saucepan, combine broken chocolate pieces with butter. Place over low heat and melt while stirring. Alternatively, melt in a microwave. Cool the mixture to room temperature.
Step 3
Beat the egg with sugar using a mixer until the mixture lightens and increases 3-4 times in volume.

Add the cooled chocolate mixture and beat again until smooth.

In a separate bowl, sift flour, cocoa, and baking powder.

Add the flour mixture and salt to the batter. Use regular table salt, not coarse or sea salt, since the cookies bake in just 12 minutes and large crystals may not dissolve. Salt adds contrast, but if you dislike sweet-and-salty combinations, omit it.

Mix until a smooth, soft dough forms. If it easily comes together into a ball and pulls away from the bowl walls, it’s ready. If needed, add a little more flour.

If the dough is too sticky, refrigerate it for 10-15 minutes.

Roll the dough into 8 equal balls (about 45-50 g each). Flatten them slightly into round cookie shapes.

Place cookies on a parchment-lined baking sheet about 2-2.5 inches (5-6 cm) apart, as they will spread. Bake in a preheated oven at 350°F (180°C) for no longer than 12 minutes. The centers should stay slightly moist, while the outside turns crisp.

Transfer the warm cookies from the baking sheet to a rack. Optionally sprinkle with sea salt and serve. Enjoy!
