Preparation
Step 1
Take Pringles chips - they are all the same shape, sturdy, and won’t get soggy from the filling. If crab sticks were frozen, thaw them on the bottom shelf of the fridge. You can also use crab meat instead. Drain corn in a sieve to remove excess liquid.
Step 2
Remove the plastic from crab sticks. Sometimes the wrapping is hard to peel; you can hold the sticks over steam for 1-3 seconds to make it easier. Cut sticks into small cubes.
Step 3
Wash and thoroughly dry dill – excess moisture will make the chips soggy. Finely chop dill. You can substitute another herb that complements the filling.
Step 4
In a bowl, combine crab sticks, corn, cheese, and herbs. I used soft cream cheese (like Hochland), but any cheese works - soft, semi-hard, or hard. Grate the cheese. Add mayonnaise. I did not add salt, as the cheese, crab sticks, and mayo were already salty enough.
Step 5
Mix the filling. Optionally, you can add a little minced garlic.
Step 6
Spoon about 1 teaspoon of filling onto each chip. Arrange chips on a flat dish. Garnish as desired - I used caviar and parsley sprigs. Serve immediately so the chips stay crispy. You can prepare the filling ahead of time and refrigerate, then fill the chips just before serving. Enjoy!
