Chinese-Style Eggplant Appetizer

Preparation
Step 1
First, prepare all the necessary ingredients and spices for making this delicious quick-fried eggplant dish.
Step 2
Peel the skin off three fresh seasonal eggplants and cut them into medium-sized pieces.
Step 3
Place the chopped eggplant pieces into a large bowl and add 1 tablespoon of salt.
Step 4
Pour 1 liter (about 4¼ cups) of boiled water at room temperature over the eggplant, and let soak for 15-20 minutes, stirring 2-3 times during the process.

After soaking, squeeze the eggplant pieces well with your hands and place them on a paper towel.
Step 6
Pour 100 g (about ¾ cup) of potato starch into a deep plate, then coat each eggplant piece in starch.
Step 7
Heat a pan over high heat, pour in vegetable oil, and once hot, fry the starch-coated eggplant pieces until golden and crispy.
Step 8
Transfer the crispy, golden fried eggplant pieces onto a plate lined with paper towels.
Step 9
For the sauce, press two garlic cloves into a small bowl, add ½ tsp ginger, ½ tsp coriander, ⅓ tsp hot red pepper, 1 tbsp sugar, and 3 tbsp soy sauce. Mix everything.

Heat a dry pan, pour in the sauce, and stir well while warming it up.

Add 100 ml (about ⅓ cup + 1 tbsp) of water and 1 tsp of starch to the sauce. Mix thoroughly and bring it to a boil.

In a deep bowl, place the first batch of fried eggplant pieces, add 1 tablespoon of the hot sauce, and mix to coat.

Serve the eggplant with sauce on individual plates. Top with fresh parsley to taste.
