Step 1
How to make Chinese cabbage salad with cucumber and pepper? Prepare the ingredients. You can vary amounts to your taste: love cucumbers - add another one; love tomatoes - use more; don’t like a certain vegetable - leave it out. You can also add more herbs or leafy greens. Wash and dry the vegetables beforehand.
Step 2
Remove the outer leaves from the cabbage and rinse the head under cool water. Don’t soak it too much - Chinese cabbage is very loose and water can stay between the leaves. Alternatively, separate into individual leaves, wash them, then dry. Extra moisture isn’t needed in the salad. Slice the cabbage into long strips.
Step 3
Slice the cucumber into rounds. If the skin is thick, peel it.
Step 4
Cut the bell pepper, remove the seeds, and chop into small pieces.
Step 5
Cut the avocado, peel it, and dice it into pieces the same size as the pepper - uniform cuts always look nice.
Step 6
Cut the cherry tomatoes into quarters.
Step 7
Slice the onion into half-rings.
Step 8
Put all the salad ingredients into a bowl, add a handful of clean, dry arugula. Salt to taste.

For the dressing, mix olive oil and lemon juice. Choose high-quality extra-virgin olive oil - it’s the healthiest and tastiest. If you don’t have olive oil, use regular vegetable oil.
Step 10
Add the dressing to the salad and toss. Serve immediately. If it sits, the vegetables will release juice and the salad will lose its attractive look and taste.
