Chinese Cabbage Salad with Croutons

You can use not only mayonnaise but also sour cream or natural yogurt as a dressing. They can be used alone or mixed with mayonnaise in any proportion to reduce the calorie content of the dish.

Step 1
Use boiled-smoked sausage, it’s softer and better for salad. Ham or meat like pork loin also works. Use 1 medium fresh cucumber. You can use store-bought croutons or fry your own.
Step 2
Wash the cabbage and remove wilted outer leaves. Cut the needed amount into thin strips. You can cut the whole head or tear individual leaves first. The top green part of the leaves is preferred.
Step 3
Peel the sausage and cut into medium-sized strips.
Step 4
Wash the cucumber, cut off the ends, and taste to make sure it isn’t bitter. Cut into strips as well. For a neat salad, cut all ingredients to a similar size and shape.
Step 5
Cut bread into small cubes. Any white bread works: baguette, loaf, or sandwich bread. Rye bread can also be used.
Step 6
Heat vegetable oil in a pan and fry the croutons over low heat, stirring, until golden brown and crispy.
Step 7
Place all ingredients in a salad bowl, season with salt and pepper (remember the mayonnaise and sausage already add salt). Add mayonnaise and mix well.
Step 8
Divide the salad onto serving plates and top with croutons.
Step 9
Serve immediately so the croutons remain crunchy. Enjoy!
