Step 1
Prepare all the ingredients first. Start with the dressing. You can use any vegetable oil; olive oil (extra virgin) works best. Use mild or grainy mustard. You may also add a bit of lemon juice.
Step 2
In a small bowl, combine olive oil, mustard, honey, salt, and pepper. Whisk thoroughly until smooth. The oil should emulsify with the honey and mustard. The dressing is ready.
Step 3
Now prepare the main ingredients. The chicken can be baked, boiled, or pan-fried. You can also adjust the vegetable mix to your taste. Use store-bought or homemade croutons made from dried bread. Choose any soft cheese (feta, mozzarella, cream cheese, or blue cheese).

Rinse and pat dry the chicken fillet. Cut it into medium pieces, season with salt and pepper.

Place the chicken in a baking dish, drizzle with oil, and bake at 180°C (350°F) for 10-15 minutes. You can also bake whole fillets for 20-25 minutes and slice afterward.

While the chicken bakes, chop the remaining ingredients. Rinse and roughly chop the Chinese cabbage.

Slice the tomatoes. Use firm ones so they keep their shape - regular tomatoes into wedges, cherry tomatoes cut in half.

Wash and dry the pear. Cut into quarters, remove seeds, and slice thinly. Prepare it last since pears darken quickly. If the skin is tender, you can leave it on.

Once the chicken is ready, assemble the salad.

In a large bowl, combine cabbage, tomatoes, baked chicken, and pear.

Pour the dressing over the salad and gently toss to combine, being careful not to crush the tomatoes and pear.

Transfer to a serving plate, top with pieces of blue cheese, and sprinkle with croutons right before serving. Enjoy your meal!
