Step 1
Preheat the oven to 220C and line a baking tray with baking paper. Alternatively, preheat an air fryer to 190C.

Spread the chickpeas evenly on the prepared tray and pat them dry thoroughly with kitchen paper. Add the sumak, olive oil, and a pinch of salt and pepper, then mix well with your hands to ensure the chickpeas are evenly coated. Bake or air fry for 15-20 minutes, or until crisp and golden.
Step 3
While the chickpeas are roasting, prepare the pea spread. In a small blender, combine the peas, 2 tablespoons of tahini, nutritional yeast, sesame seeds, lemon juice, a pinch of salt, and a splash of hot water. Blend until smooth and creamy, adding more water if necessary to achieve the right consistency.
Step 4
Spread the vibrant green pea mixture generously over slices of toasted sourdough. Top with the crispy chickpeas, drizzle with the remaining tahini, and sprinkle over a little extra spices and lemon zest.

Serve it.
