Chicken with Vegetables in Sweet-and-Sour Sauce
This quick Asian-style dish combines tender chicken with colorful vegetables, pineapple, ginger and a tangy sweet-and-sour sauce. You can vary the vegetables or replace the chicken with another type of meat.

Preparation
Step 1
Prepare all the ingredients. You can replace the chicken with beef, pork or turkey, keeping in mind that the cooking time will vary depending on the meat.
Step 2
Pat the chicken fillet dry and cut it into strips.
Step 3
Place the chicken in a bowl, add the teriyaki sauce and starch, and mix thoroughly so the pieces are evenly coated.
Step 4
Remove the seeds and stem from the bell peppers and cut them into strips. Using peppers of different colors will make the finished dish more colorful.
Step 5
Drain the canned pineapple and cut it into small pieces.
Step 6
Peel the carrot and cut it into thin sticks.
Step 7
Peel the onion and cut it into large pieces.
Step 8
Peel the garlic and ginger and finely chop them.
Step 9
Heat 2 tablespoons of vegetable oil in a deep frying pan over high heat. Add the chicken and stir-fry for approximately 5–7 minutes, until browned. Transfer the chicken to a plate.
Step 10
Add the remaining oil to the pan. Add the ginger and garlic and stir-fry for approximately 30 seconds, until fragrant.
Step 11
Add the pineapple, bell peppers, carrot and onion. Stir-fry over high heat for another 3–5 minutes.
Step 12
Return the chicken to the pan and add the sweet-and-sour sauce. Cook everything together, stirring, for another 3–5 minutes or longer if needed, until the chicken is completely cooked through and the vegetables reach your preferred tenderness.
Step 13
Transfer the chicken and vegetables in sweet-and-sour sauce to a serving plate, sprinkle with chopped fresh herbs and serve.
