Any cheese will work in this dish – hard, semi-hard, or soft like mozzarella. The key is using high-quality, flavorful cheese that melts well and doesn't contain artificial milk fat substitutes.
Preparation
Step 1
Prepare all the necessary ingredients. You can use a whole chicken and cut it into small portions or use chicken breast. To make the dish quickly, use canned red beans. If you're using dried beans, soak and cook them in advance until tender.
Step 2
Rinse the chicken breast, pat dry, and cut into medium-sized pieces. Drain the liquid from the canned beans. Peel the onion and garlic.
Step 3
Heat a little vegetable oil in a deep skillet. Sauté the chicken breast, stirring, until lightly golden. Meanwhile, chop the onion and garlic.
Step 4
Add the chopped onion and garlic to the skillet. Sauté for 1–2 minutes, stirring to avoid burning.

Season with salt and pepper to taste. At this stage, you can add your favorite spices like basil, thyme, oregano, etc.

Add tomato paste and half a cup of water (about 4 fl oz). Use high-quality paste. Stir everything and bring to a boil.

Add the canned red beans to the skillet.

Stir, cover with a lid, reduce the heat to low, and let it simmer for about 15 minutes. Then, if there’s too much liquid left, increase the heat and cook uncovered until the desired sauce consistency is reached.

Sprinkle grated cheese over the chicken and beans. Use any good melting cheese – like gouda. Add more if desired. Cover with a lid for about a minute, then turn off the heat. Let it sit until the cheese is completely melted.

Sprinkle the finished dish with ground allspice and finely chopped herbs. Serve and enjoy!
