Chicken with Cabbage Baked in the Oven

Step 1
You can use any chicken parts for this recipe. This time I chose chicken drumsticks. If your chicken is frozen, remove it from the freezer in advance and leave at room temperature until fully thawed. I used young cabbage, which has more tender leaves, making the dish softer and juicier.
Step 2
Cut the chicken into equal-sized portions. Rinse the meat and pat dry with paper towels. Place in a deep bowl. Add mayonnaise, salt, and pepper to taste. You may also add any spices you like at this stage.

Mix well and let marinate for 30 minutes to 1 hour at room temperature.
Step 4
Remove outer leaves from the cabbage. Rinse and dry the head. Slice the cabbage into strips - not too thin.
Step 5
Peel the carrots and onion. Slice the onion into half-rings or cubes. Grate the carrot using a coarse grater. Heat vegetable oil in a skillet and sauté the vegetables until the onion is translucent.
Step 6
Add tomato paste, mix, and cook for another minute. Tomato paste can be omitted if desired.

Add the tomato mixture to the cabbage. Season with salt and pepper to taste.

Mix thoroughly.

Place the cabbage in a baking dish of suitable size, then layer the marinated chicken on top. During baking, cabbage will shrink and reduce in volume by about half.

Place the dish in a preheated oven. Bake until the chicken is fully cooked. Time and temperature depend on your oven. I baked at 392°F (200°C) for about 50 minutes. At the end, I turned on convection mode and baked for another 10 minutes to brown the chicken. Times and temperatures are approximate.

Serve hot, garnished with fresh herbs.
