Chicken thigh stew

Preparation
Step 1
Place the chicken in a large bowl and season with salt, black pepper, all-purpose seasoning, garlic, soy sauce, sugar, sliced peppers, spring onion, and onion.
Step 2
Mix thoroughly to coat, then cover the bowl with cling film and leave to marinate in the fridge for at least 30 minutes, or ideally overnight for maximum flavour.
Step 3
When ready to cook, heat the oil in a large frying pan over medium heat. Add the marinated chicken mixture and cook for about 5 minutes on each side, until the chicken is browned and the vegetables begin to soften.
Step 4
In a separate jug, mix the cornflour with 500ml of water, then pour into the pan. Stir in the thyme, hot tomato sauce, chopped tomato and ketchup.
Step 5
Mix everything together, cover with a lid, and simmer gently for 30 minutes, or until the chicken is fully cooked and tender.
