Chicken Soup with Star Pasta

Preparation
Step 1
Start by making the broth. I used a chicken soup set (backs and necks), but you can use any parts or a whole chicken. The richest broth comes from hens or rooster meat.
Step 2
Rinse the meat and place it in a pot. Peel one onion and one carrot and add them to the pot. Pour in 2.5-3 liters (about 10-12 cups) of water for every 700 g (1.5 lb) of meat. Bring to a boil over high heat, skim off the foam, reduce the heat, and simmer until the chicken is tender. Keep the lid slightly ajar.
Step 3
Peel the remaining onion, carrot, and potatoes.
Step 4
Cut the potatoes into small cubes or sticks. Finely chop the onion and grate the carrot on a coarse grater. Rinse the bay leaf.
Step 5
Heat some vegetable oil in a frying pan (2-3 tbsp). Add the onion and carrot. Sauté over medium heat, stirring occasionally, until lightly golden and aromatic.
Step 6
Once the chicken is cooked, remove it from the pot. Discard the boiled onion and carrot - they’ve done their job flavoring the broth. Add the potatoes to the pot. Bring to a boil over high heat, then reduce to medium and cook for 10-15 minutes until potatoes are tender.
Step 7
Add star-shaped pasta. Stir to prevent sticking. Cook for 4-5 minutes until pasta is ready.
Step 8
Season with salt to taste. Add the bay leaf and sautéed vegetables to the pot and simmer for 1 more minute.
Step 9
Finally, add chopped greens and the chicken meat back to the soup. Serve hot, with ground black pepper to taste. Enjoy!
