Chicken Soup with Pearl Barley

Delicious, hearty, and made from accessible ingredients! Chicken Soup with Pearl Barley will satisfy the whole family. Very easy to cook, even a beginner cook can handle it. Pearl barley can be replaced with any other grain or pasta of your choice.

Preparation
Step 1
You can use any part of the chicken. I used a soup set for a richer broth. Use filtered or bottled water to avoid unpleasant taste.
Step 2
Rinse the chicken under running water and place it in a pot. Cover with clean water and bring the broth to a boil. Skim off the foam and add a bay leaf. Remove the leaf after 5 minutes to avoid bitterness. You can also add the bay leaf at the end, but I prefer it at the start. Cook the broth for about 20 minutes.
Step 3
Rinse the pearl barley well and soak it in water for 30 minutes. Even better, soak it overnight for faster cooking. After soaking, cover with water 1 inch (≈3 cm) above the grains and cook for 20-25 minutes until partially done.
Step 4
Peel, rinse, and cut the potatoes into pieces.
Step 5
Remove the chicken from the broth and let it cool slightly. Strain the broth and add potatoes and the rinsed pearl barley. Bring the soup to a boil and cook until the potatoes are done.
Step 6
Peel the onion and cut into small cubes.
Step 7
Wash and peel the carrot (vegetable peeler works best) and grate it on a medium grater.
Step 8
Sauté the onion and carrot in heated vegetable oil for 5-7 minutes until soft.
Step 9
Rinse dill sprigs, lightly pat dry, and chop finely.
Step 10
Remove the meat from the boiled chicken parts and shred into large fibers or cut into pieces.
Step 11
Add the sautéed vegetables, chicken meat, and dill to the soup. Season with salt and optionally add your favorite spices. Cook for another 5-7 minutes, then remove from heat. Cover and let rest for 15 minutes.
