Chicken Soup with Homemade Noodles (No Potatoes)

Preparation
Step 1
First, prepare all the necessary ingredients and spices for the delicious homemade chicken soup with noodles.
Step 2
To make the dough, take a deep bowl, crack one chicken egg into it, add about 1/3 teaspoon of salt, and whisk until smooth.
Step 3
Add about 100 g (3.5 oz) of all-purpose flour, mix everything well, and knead the dough.
Step 4
Continue kneading by hand until the dough becomes dense and non-sticky. Add a bit more flour if needed.
Step 5
Shape the dough into a ball, place it in a plastic bag, and let it rest for 20 minutes.
Step 6
Heat a suitable pot on the stove, pour in about 3 tablespoons of vegetable oil, and add a pinch of salt to prevent sticking.

Cut 6 chicken thighs into small, bite-sized pieces.
Step 8
Place the chicken into the pot with the hot oil, stir, and fry over high heat (around 400°F / 200°C surface temp) until golden brown.

Add 1 finely chopped onion, stir, and sauté until the onion becomes translucent.

Cut 1 medium carrot into small pieces, add to the pot, stir, and cook for about 2 minutes.

Pour in 1.5 liters (about 6 cups) of boiling water, cover the pot, and bring to a boil over high heat.

Lightly flour your work surface and roll out the dough into a very thin sheet.

Fold the sheet in half twice, then cut it into two pieces.

Stack the two pieces and slice them very thinly into noodles. Spread them out on the table to dry slightly.

Skim off the foam from the boiling soup, then add the noodles. Stir to combine.

Add salt, a pepper mix, 1 tablespoon dried herbs, 1 bay leaf, and ½ teaspoon dried garlic.

Stir well, cover, and simmer over low heat until the soup and noodles are fully cooked.
