Preparation
Step 1
Use any part of already cooked chicken you like and have on hand.
Step 2
Melt the butter in a large saucepan over a medium heat. Add the onions, celery, and carrots, cooking gently until they begin to soften.

Stir in the flour and cook for 2 minutes, stirring continuously. Pour in the chicken stock and bring the mixture to the boil, stirring as it thickens. Season with salt and freshly ground black pepper, then reduce the heat and simmer for 10 minutes, or until the vegetables are tender.
Step 4
Add the cooked chicken to the pan and continue cooking until heated through. Taste and adjust the seasoning as needed, then stir in the parsley just before serving.
