Chicken Salad with Garlic, Pineapple, and Eggs

Hearty, juicy, layered - great for holidays or casual dinners! This salad with chicken, garlic, pineapple, and eggs is incredibly tender and tasty. One special feature: garlic and spices are added to the mayonnaise used between layers. It’s easy to make, and chicken can be swapped for other meats.

Preparation
Step 1
It’s best to start by preparing the mayonnaise sauce - it will sit and infuse while you prep the rest.
Step 2
In a small bowl, mix mayonnaise with pressed garlic cloves and ground black pepper. Add a bit of salt if your mayo is not very salty.
Step 3
Now prepare the remaining salad ingredients. You can replace chicken breast with any meat you like.
Step 4
Wash the chicken breast. Boil it in salted water until fully cooked - about 25 minutes. Let it cool, then cut it into small cubes.
Step 5
Hard-boil the eggs, cool and peel them. Separate 2 eggs into whites and yolks, setting yolks aside for decoration. Grate the whites and remaining whole eggs using a coarse grater.
Step 6
Grate the cheese coarsely. You can use any good-quality cheese like Gouda, or non-brined mozzarella (like for pizza). Avoid cheese with vegetable fat substitutes.
Step 7
Boil carrots in their skins until tender, cool, peel, and grate coarsely. To boil: rinse, place in a pot with cold water, bring to a boil, then simmer for 20-25 minutes. Test with a sharp knife - it should go in easily.
Step 8
Drain the pineapples and dry them. Cut into small cubes. If they’re too juicy, gently squeeze them to prevent the salad from becoming watery.
Step 9
You can layer ingredients in a salad bowl, but for a festive look, use a 16 cm (6-inch) cooking ring to show the layers. Start with half the chicken and top with mayo.
Step 10
Add half the grated eggs, spread them evenly, then add mayo.

Next, a layer of half the grated carrots and a touch of mayo.

Add all the grated cheese and coat with mayo.

Add the diced pineapples on top. Mayo here is optional since pineapples are juicy.
Step 14
Repeat the remaining chicken, grated eggs, and carrots. Top with the rest of the mayo sauce.

Sprinkle finely grated egg yolks on top. Chill the salad for 1 hour to let flavors meld.
Step 16
Before serving, remove the ring. Garnish with fresh herbs. Enjoy!
