Chicken Salad with Apple and Walnuts

Light, healthy, diet-friendly, and without mayonnaise! Chicken salad with apple and walnuts is quick and easy to prepare. It’s filling and rich in protein. This salad can be served as a snack or even replace dinner. Natural yogurt is used as dressing.

Preparation
Step 1
It's best to use chilled chicken breast - it will be juicier and tastier. Choose sweet-and-sour apple varieties. Use plain, unsweetened natural yogurt. You can replace yogurt with low-fat sour cream.
Step 2
Pre-boil the chicken meat. To cook chicken breast, bring water to a boil in a pot, add the fillet, and season with salt. Simmer gently for 30 minutes. Turn off the heat and let the fillet cool in the pot to keep it juicy. Once cooled, pat dry and dice into cubes.
Step 3
Cut the apple into cubes too - the salad will look neat and appetizing if all ingredients are the same size and shape. Peel the apple if the skin is too tough.
Step 4
Dice the cheese the same size as the apple. I used Adyghe cheese, which is mild. Next time I plan to use feta or bryndza for a stronger flavor.
Step 5
Chop the salad leaves into small squares. I used iceberg lettuce as it's juicier and crisper than regular leaf lettuce. Chinese cabbage or romaine are also great choices.
Step 6
Finely chop the walnuts. I reserved a few halves for decoration. For extra aroma and crunch, you can lightly toast them in a dry skillet beforehand.
Step 7
Combine all the ingredients in a bowl. Add yogurt, season with salt, and optionally add pepper.
Step 8
Mix the salad thoroughly.
Step 9
I used a plating ring to shape the salad, but it’s totally optional - you can simply serve it in a bowl. Enjoy your meal!
