Preparation
Step 1
Take puff pastry out of the freezer in advance and defrost according to package instructions.
Step 2
Wash the chicken fillet, pat dry with paper towels. Finely dice the meat into small cubes. Transfer to a bowl. Season with salt and pepper to taste.
Step 3
Grate hard cheese on a medium grater. Any cheese works as long as it’s tasty, good quality, and melts well. Instead of hard cheese, you can use suluguni or mozzarella.
Step 4
Add the cheese to the meat, then add a couple of tablespoons of mayonnaise, sour cream, or plain yogurt without additives. Mix the filling thoroughly with a spoon.
Step 5
Cut the thawed pastry into rectangular pieces.
Step 6
Lightly flour your work surface and roll each strip to about ⅛ in (3 mm) thickness.
Step 7
On each strip, make cuts with a knife or pizza cutter: one in the middle and two at the corners. Leave the center intact.

Place about 1 tablespoon of filling in the center.

Fold the filling over with the top triangle of dough. Seal the edges well.
Step 10
Next, fold over the right flap of dough and seal the edges.

Finally, fold over the last flap and pinch the edges together.

Place the prepared open pastries (rose-shaped) on a baking tray lined with parchment paper or a baking mat.
Step 13
Beat one egg in a bowl. Brush the pastries on all sides, including the filling, with the egg wash. This gives them shine and a golden crust.
Step 14
Preheat the oven to 350°F (180°C) about 10 minutes before baking. Bake chicken puffs for about 35 minutes until golden brown. Since ovens vary, the baking time may differ. Serve with pickles, salads, fresh herbs, or sauces.
