Chicken Muffins with Cheese

Unusual and savory flavor, perfect for breakfast or a snack! Chicken Muffins with Cheese are mini savory pies with filling evenly spread through the dough. Mixed like a pie batter, but baked portioned like muffins.

Preparation
Step 1
You can use chicken fillet from any part (I used breast). Kefir of any fat content will work. Choose natural cheese, tasty and without substitutes. Use any spices - I chose Provençal herbs.
Step 2
Rinse the meat and pat dry with paper towels. Mince it using a grinder, blender, or chop finely with a knife.
Step 3
Peel the onion and chop finely. You may skip it if preferred.
Step 4
Grate the cheese on a coarse grater.
Step 5
In a mixing bowl, pour kefir and crack in the eggs. Wash eggs before use (bacteria may be on the shell). Add salt, seasonings, and baking soda. Whisk until smooth.
Step 6
Add the chicken, onion, and cheese. Mix with a spatula.
Step 7
Sift flour into the bowl (important for airiness). Mix with a spatula until uniform. The batter should be thick, dropping from the spatula rather than flowing.
Step 8
Take muffin molds (I use silicone). It’s best to insert paper liners, or grease with a little oil if you don’t have them. Fill molds almost to the top. They’ll rise, but not too much.
Step 9
Bake in a preheated oven at 180°C (356°F) for 30-45 minutes. Time depends on your oven. Muffins should turn golden.
Step 10
Cool slightly and serve. They’re delicious warm or cold. Enjoy!
