Preparation
Step 1
Prepare the ingredients. Ideally, use ground chicken made from skinless chicken breast without added skin or excess fat. You can prepare it yourself in a blender or meat grinder. Add paprika, a Georgian-style herb and spice blend, chicken seasoning or other preferred spices, if desired.
Step 2
Peel the onion and cut it into very small cubes. For a finer texture, process it through a meat grinder or grate it. You can omit the onion entirely if preferred.
Step 3
Combine the ground chicken, onion, eggs, sour cream, salt and ground black pepper in a bowl. Mix thoroughly with a spoon until smooth. The mixture should be semi-liquid, unlike a firm meatball mixture, and soft enough to spoon directly into the pan.
Step 4
Add the starch and mix thoroughly. You can use cornstarch or potato starch, or replace it with flour.
Step 5
Heat the vegetable oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and shape them into even, medium-sized round fritters.
Step 6
Cook the fritters for 3–5 minutes on each side, until golden and completely cooked through. The exact time will depend on the pan, the thickness of the fritters and the heat level.
Step 7
Transfer the juicy chicken mince fritters to a serving plate and serve hot.
