Chicken Liver with Bell Pepper

Preparation
Step 1
How do you make chicken liver with bell pepper? Prepare all the ingredients. I recommend choosing bell peppers of different colors, using half of each. That way the dish will be not only tasty but also beautiful. Fresh liver is best. Fresh liver is firm, whole, and keeps its shape during frying and simmering. If you still use frozen liver, thaw it in the refrigerator beforehand.
Step 2
Rinse the thyme and pat it dry. If you do not have fresh thyme sprigs, you can use dried thyme instead. Thyme can also be replaced with any other herbs you like or with dried herbes de Provence.
Step 3
Rinse the liver thoroughly until the water runs clear, and remove any fatty parts and traces of bile. Cut large pieces of liver in half. Do not chop it too finely, otherwise the liver will dry out during cooking and become tough.
Step 4
Remove the seeds from the bell pepper and cut it into medium pieces. Do not cut it too small, otherwise it may break down during the long simmering.
Step 5
Heat the vegetable oil in a skillet. Add the chicken liver to the skillet. Fry it over medium heat for 2–3 minutes, stirring. All the liver pieces should turn light brown.

Add the bell pepper and stir. Season with salt and pepper and stir again.
Step 7
Lay the thyme sprigs on top, or sprinkle with dried thyme.
Step 8
Cover the skillet with a lid and simmer the liver with the bell pepper for about 15 minutes over medium heat. During this time, both the liver and the pepper will release a lot of juices. Because of that, the dish will simmer in enough liquid. This is what makes the liver very tender and soft.
Step 9
Divide the liver with bell pepper among plates and serve immediately. You can sprinkle the finished dish with chopped herbs. Boiled rice, potatoes, or pasta will work well as a side dish. Enjoy your meal!
