Chicken Liver Soup

Preparation
Step 1
You can replace chicken liver with turkey, pork, or beef liver. Use fresh or frozen liver. Frozen liver must be thawed beforehand in the refrigerator’s lower shelf.
Step 2
Rinse the liver thoroughly until the water runs clear, remove fat layers and bile residues. Cut large livers in half.
Step 3
Peel and dice the potatoes into small cubes.
Step 4
Peel and finely dice the carrots.
Step 5
Dice the onion finely.
Step 6
Wash, dry, and finely chop dill and parsley. Optionally, replace or add other herbs such as green onions, cilantro, or a mix of herbs.
Step 7
Bring 1.5 liters (about 6 cups) of water to a boil in a pot. Add the potatoes and cook for 10 minutes until half done.
Step 8
Heat 1 tablespoon of vegetable oil and some butter in a skillet over medium heat. Add chicken liver and sauté, stirring, for 5-6 minutes. Do not overcook, or the liver will become dry and tough.
Step 9
Transfer the liver to the soup pot and cook, stirring, for 5-7 minutes.
Step 10
Heat the remaining vegetable oil in the skillet. Add onions and fry for 3-5 minutes until lightly golden.
Step 11
Add carrots and fry another 4 minutes until golden.
Step 12
Transfer the sautéed vegetables to the soup pot. Add noodles, bay leaf, ground black pepper, and salt. Cook, stirring, for 7-8 minutes until the pasta is tender. You can substitute noodles with any other small pasta.
Step 13
Finally, add the chopped herbs.
Step 14
Remove the chicken liver soup with noodles from heat. Cover the pot and let the soup sit for about 10 minutes.

Serve hot in bowls. Enjoy your meal!
