Chicken Leg Shashlik
Tasty, aromatic, juicy, and with a golden crust! Chicken Leg Shashlik is a great alternative to pork or beef. It is easy to grill outdoors with family and friends. A big advantage of this dish is that the meat does not need to marinate for long, and the result is sure to impress.

Preparation
Step 1
How do you grill chicken leg shashlik? First, prepare all the necessary ingredients. For shashlik, it is better to use fresh, not frozen, chicken legs, as this will affect the taste and juiciness of the finished dish. Wash the chicken legs under running water and dry them with paper towels.
Step 2
Separate the chicken legs into drumsticks and thighs, using a knife or kitchen scissors. Remove the meat from the bones with a sharp knife. The bones can be used to make a rich, flavorful broth for noodles or soup.
Step 3
Place the chicken meat in a large glass or enamel container. Season with salt and sprinkle with dry spices. I used allspice and dried basil. Oregano, paprika, or any other spices to your taste will also work well here. You can also use a ready-made shashlik seasoning; it will suit chicken legs perfectly.
Step 4
Wash the large tomato under running water, dry it, and cut it into four wedges. Squeeze each wedge with your hands over the meat, then place the tomato itself on top.
Step 5
Peel the onion and wash it together with the herbs under running water, then dry. I used parsley, but you can also add dill. Cut the onion into rings and the herbs into large pieces. Lightly squeeze the onion rings and herbs with your hands so they release their juices. Add them to the container with the meat and tomatoes.
Step 6
Mix everything thoroughly, cover with a lid or a flat plate of a suitable diameter, and place in the refrigerator to marinate for a couple of hours.
Step 7
Light the charcoal grill and wait until the wood burns down and good coals remain. The marinated chicken legs can be grilled on skewers or on a grill grate.
Step 8
In this recipe, the meat was cooked on a grill grate. Place the grate over the coals and wait until it heats well. Put the chicken fillet pieces on the grate, first removing the onion, tomatoes, and herbs from the meat.
Step 9
Turn the chicken pieces on the grate from time to time using tongs.

Grill until done, about 15–20 minutes.

Cook until an appetizing crisp crust appears.
Step 12
Serve the finished chicken leg shashlik hot, straight from the grill. Fresh vegetables, herbs, and red or white sauce go well with shashlik. Enjoy!
