Chicken in spicy yogurt marinade

These flavour-packed chicken skewers are marinated in a bold, aromatic blend and grilled to perfection. Served with a sweet and spicy homemade jam, they make the perfect appetiser or main dish.

Ingredients
For the marinade
1 teaspoon
Ground cumin
0.25 teaspoon
Chilli flakes
For the tomato jam
0.5 teaspoon

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
To prepare the marinade, combine all the marinade ingredients in a bowl and mix well.
Step 2
Cut each chicken breast into five even strips and add them to the marinade. Stir thoroughly to ensure all the pieces are coated. Cover and marinate in the fridge for at least one hour, preferably longer for deeper flavour.
Step 3
Once marinated, remove the chicken from the fridge and thread the strips onto wooden skewers.
Step 4
Heat a large griddle pan over high heat. When hot, place the skewers onto the pan and cook for about three minutes on each side, until the chicken is browned and fully cooked through.
Step 5
Meanwhile, to make the jam, place all the jam ingredients in a saucepan and bring to a boil. Lower the heat and allow the mixture to simmer gently for up to an hour, stirring occasionally, until it reaches a thick, jam-like consistency. Allow to cool before serving alongside the grilled chicken skewers.
