Chicken Dumplings (Kletski)
Crazy tasty, very simple, quick, kid-friendly! You can make chicken dumplings in about 20 minutes. It’s a surprisingly tender, nourishing, diet-friendly main that fits many eating plans. It makes an ideal dinner - boiled dumplings go well with side dishes and vegetable salads.

Preparation
Step 1
How to make chicken dumplings? Very simply and quite quickly. First, prepare all the needed ingredients. If you don’t have fresh spinach, use frozen - thaw it completely and squeeze out excess moisture.
Step 2
Rinse the chicken breast and pat dry. Cut into pieces and grind through a fine grinder plate, or blend until minced. Transfer the minced chicken to a bowl.
Step 3
Crack an egg into the bowl with the minced chicken.
Step 4
Add salt. It’s best to use coarse salt, because with fine salt it’s easy to oversalt.
Step 5
Add ground black pepper. If you like, you can replace it with white or green pepper.
Step 6
Add chopped spinach to the bowl. If using fresh spinach, sort it and remove the stems. Then blanch it in boiling water for 30-60 seconds, immediately transfer to ice water and let cool. Squeeze out moisture and chop finely.
Step 7
Add flour to the bowl with the mince and spinach. Sift it first to remove any small debris and flour lumps.
Step 8
Add paprika and mix everything thoroughly until smooth. Let the mixture rest for 10 minutes.

You can shape the dumplings by hand. But if you use a tablespoon dipped in water, they come out neat and almost the same size. Wet a tablespoon with water and scrape the mixture against the side of the bowl. Transfer to a wet palm and, using the spoon, shape a dumpling.

Place the dumplings on a plate moistened with water.

Pour 1.5 liters of water (about 6 1/3 cups) into a pot and bring to a boil over medium heat; salt the water. Reduce to a gentle simmer and lower in the dumplings, making sure they don’t stick to the bottom. Don’t add them all at once - they can stick together and lose shape. Simmer until they float to the surface - about 5-7 minutes (adjust to your stove). Remove with a slotted spoon and serve right away with any side dish, or with vegetables and herbs.
