Chicken Chakhokhbili with Potatoes

Advice
To avoid eye irritation while chopping onions, rinse the onion and knife under cold water. A cutting board won’t absorb unpleasant onion odors if you rub it with a piece of lemon beforehand. You can substitute the chicken with turkey or any other type of meat you like. However, keep in mind that in that case, the cooking time and calorie content of the dish will change.
Preparation
Step 1
For cooking, you can use any part of the chicken or chop a whole chicken into pieces. I’ll be using chicken thighs. Peel the potatoes ahead of time and rinse them under running water to remove any dirt.
Step 2
Cut the potatoes into large chunks, cover with water, and set them to boil separately. Cook the potatoes for about 15-20 minutes, then drain the hot water.
Step 3
Peel the onions, rinse under cold water, and slice them into half-rings.
Step 4
Chop the chicken into pieces. Heat vegetable oil in a hot skillet and fry the chicken for 5-7 minutes until golden brown.
Step 5
Add the sliced onions to the skillet. Fry for another couple of minutes until you smell the characteristic onion aroma.
Step 6
Remove the stem ends from the tomatoes and blend them into a purée.
Step 7
Add the tomato purée and your chosen spices to the chicken in the skillet. The final taste of the dish will depend on the spices you use. Mix everything well. Add salt.
Step 8
Simmer the chicken in the sauce under a lid over low heat for 15-20 minutes. To increase the amount of sauce, you can add a little hot water.
Step 9
Toward the end of cooking, add the boiled potatoes to the skillet with the chicken. Heat everything together for another 3-5 minutes, then remove from heat. Add chopped fresh herbs. Serve the finished dish hot. Enjoy your meal!
