Chicken Breasts in Cream on the Skillet

Step 1
It’s better to take chilled meat for juicier and tastier results. Cream with 10% or 20% fat works well; the higher the fat, the more calories the dish will have. Keep that in mind.

Wash and thoroughly dry the fillets - excess moisture prevents proper frying. Cut each into two or three pieces depending on size. Salt and pepper each piece.

Wipe mushrooms carefully with a damp sponge so they don’t absorb water. Cut each mushroom into 4 parts or slice them as you prefer.

Grate the cheese coarsely. Any cheese will do - hard, semi-hard, or soft like mozzarella. The main thing is that it’s tasty, good quality, without milk fat substitutes, and melts well.

Heat a skillet on high. Pour in vegetable oil for frying. Place chicken pieces in the pan. Fry for 6-7 minutes until golden brown, turning occasionally. Check doneness by piercing the thickest piece - the juice should be clear, not pink. Remove meat from the pan.

Use another skillet or wash the one used for the chicken. Reheat it with oil on medium heat. Slice garlic and fry in the oil for a couple of minutes. Then remove the garlic - it’s just for flavoring the oil.

Add mushrooms to the skillet. Salt them immediately - this makes mushrooms release juice and prevents burning. Fry while stirring until the liquid evaporates.
Step 8
Pour in the cream and add the grated cheese. Reduce heat to low. Stir constantly until the cheese melts.
Step 9
Put the chicken breasts into the sauce and simmer for 2-3 minutes on low heat.
