Chicken Breast with Cheese in a Skillet

You can replace chicken with turkey or any other type of meat if you wish. Keep in mind that cooking time and the dish’s calorie content will change accordingly.
Preparation
Step 1
In addition to the listed spices, you can add your own to taste, such as paprika, khmeli-suneli, dried herbs, etc. Choose small chicken breasts so they cook through. If the fillet is large, sear it first, then finish in the oven.
Step 2
Grate the cheese on a coarse grater. Any cheese will do, from regular hard cheese to suluguni - the main thing is that it’s tasty. I’m using mozzarella for pizza.
Step 3
Beat the eggs until smooth so the whites and yolks combine.
Step 4
Wash and pat dry the chicken fillets. Season with salt and pepper to taste.
Step 5
Using a sharp knife, slice each fillet lengthwise, but not all the way through, and open it like a book.
Step 6
Fill the chicken “pockets” with grated mozzarella or other cheese.
Step 7
Secure the edges with toothpicks so the cheese doesn’t leak while frying.
Step 8
Dredge each fillet in flour on all sides.

Dip in the beaten eggs.

Coat in breadcrumbs. For a thicker breading, dip again in the egg and coat once more in breadcrumbs. Choose good-quality breadcrumbs - not too fine. Very finely ground (almost flour-like) crumbs may not give a crisp crust.

Heat vegetable oil in a skillet over medium heat and fry the chicken breasts with cheese on both sides until golden brown, at least 8-10 minutes per side.
Step 12
To ensure the chicken cooks through without burning, cover the skillet with a lid.

Transfer the cooked chicken to a plate, serve with a fresh vegetable salad, and pair with various sauces. Enjoy!
