Chicken Breast Roll in the Oven

Juicy, tender, soft, and aromatic - quick and delicious! Chicken breast roll in the oven is a wonderful dish made from simple ingredients. It’s great hot or cold, perfect for dinner, lunch, or even as an appetizer on a festive table, since it slices well and holds its shape beautifully.

Preparation
Step 1
You can use hard or semi-hard cheese - tasty and good-quality cheese that melts well. Use any greens to your taste. I used parsley.

Remove the thick veins from the cabbage and finely chop it.

Wash the greens, pat dry, and finely chop. Grate the cheese on a coarse grater.
Step 4
In a mixing bowl, whisk the eggs with salt until smooth. Be sure to wash the eggs before use, as harmful bacteria can be present on seemingly clean shells.

Add grated cheese, greens, and cabbage to the eggs. Mix everything well.
Step 6
Spread the cabbage mixture on a Teflon or silicone baking mat into a rectangular layer about 0.4 inches (1 cm) thick.

Bake the cabbage base in a preheated oven at 350°F (180°C) for 10-15 minutes. When the edges start to brown, remove it from the oven. Adjust baking time based on your oven.

Rinse and pat dry the chicken breasts. Cut into small pieces and place in a blender to make ground meat.

Peel the onion, rinse, and chop roughly.

Add the onion to the chicken in the blender.

Blend until you get a smooth, even mixture. Season with salt and your favorite spices. Mix well.

Spread the chicken mixture evenly over the warm cabbage base, leaving about 0.4 inches (1 cm) from the edges.

Using the mat, roll the base with filling into a tight roll.

Transfer the roll onto a sheet of foil.

Wrap the roll in foil like a candy wrapper.

Bake the roll in a preheated oven at 350°F (180°C) for about 25 minutes. Adjust time according to your oven. Carefully unwrap the foil (hot!).

Slice the roll and serve with any side dish or fresh vegetables and herbs. Enjoy!
