Chicken Breast Broth

The most delicious, healthy, and dietary, for the whole family! Chicken breast broth is a first-course recipe that can be served on its own or used as a base for soups. Made from white meat, it is low-calorie and suitable for children and diet meals.

Preparation
Step 1
Take a breast with bone - the broth will be richer. Wash and peel onion and carrot, but don’t cut them - they are used whole. Dill is for serving; you can skip it or use another herb. You may also add bay leaf and peppercorns while cooking.
Step 2
Wash the breast, remove the skin. Trim off excess fat to make the broth more dietary. Cut the fillet off the bone.
Step 3
Take a pot of suitable size. Pour in clean cold water. For best results use filtered or bottled water. If using tap water, note it may affect the taste. Bring water to a boil and drop in the bone. The protein will coagulate immediately and won’t form foam that usually appears when making broth.
Step 4
Simmer the bone for 15 minutes over low heat. Then add the whole onion and carrot. Wait for boiling and cook for another 5 minutes. After that, add the chicken fillet. Let it boil again, then reduce heat to minimum.
Step 5
Cook the broth for 40 minutes at very gentle simmering - this way it will stay clear. About 10 minutes before the end, add salt and, if you like, bay leaf and pepper. Remove onion and carrot with a slotted spoon. The broth is ready - you can serve it as is or use it as a base for soups.
Step 6
Before serving, you may strain the broth through cheesecloth for extra clarity. Add pieces of chicken fillet, carrot slices, chopped dill, or even boiled egg into bowls. Enjoy!
