Chicken, Bean and Korean-Style Carrot Salad
Made from simple ingredients yet wonderfully flavorful! This chicken, bean and Korean-style carrot salad is filling enough to replace lunch or dinner. Prepare the chicken and beans in advance for an especially quick meal, and add garlic for a sharper flavor.

Preparation
Step 1
Prepare the ingredients. You can use any chicken pieces, such as breast fillet, drumsticks or thighs. Cooked chicken fillet works well, but smoked chicken can also be used. Drain the Korean-style carrots thoroughly to remove excess marinade.
Step 2
Rinse the beans and soak them in cold water for several hours or overnight.
Step 3
Cook the soaked beans at a gentle boil until tender. Add salt toward the end of cooking. Beans soften more slowly in salted water and absorb the seasoning best once almost tender.
Step 4
Cook the chicken in boiling salted water until done. The exact time will depend on the size and type of chicken pieces; a fillet may take approximately 20 minutes. Cut into the thickest part to check. The meat should be tender, opaque and no longer pink. Remove the chicken from the broth and leave it to cool.
Step 5
Cut the cooled chicken fillet into small cubes or pull it into bite-sized pieces. If using thighs or drumsticks, remove the meat from the bones before cutting it.
Step 6
Rinse and dry the cucumber, then trim the ends. There is no need to peel it if the skin is thin and not bitter. Remove tough or bitter skin, then cut the cucumber into small strips.
Step 7
Use any flavorful hard, semi-hard, soft or processed cheese. Coarsely grate the cheese.
Step 8
Combine the chicken, cooked beans, cucumber, Korean-style carrots and grated cheese in a salad bowl. For a sharper flavor, add a peeled garlic clove passed through a press. Add the mayonnaise and mix thoroughly.
Step 9
Serve the salad immediately or refrigerate it briefly before serving.
