Chicken and Mushroom Casserole in the Oven

Preparation
Step 1
If using wild mushrooms, rinse them carefully and boil beforehand. Any fat content sour cream can be used.

Peel potatoes and cut into medium pieces. Cover with water, bring to a boil, salt, and cook over medium heat until tender. Potatoes should be soft and easily pierced with a knife.

Wash and peel the onion, cut into small cubes.
Step 4
Washed and cleaned champignons should be placed on a kitchen towel to absorb excess moisture. Leave for 15-20 minutes. Drying the mushrooms is important; otherwise, they become watery. Cut into cubes.

Drain water from boiled potatoes. Mash hot potatoes with butter. Gradually pour in warm milk and mash to a smooth consistency.

Let the mashed potatoes cool. They should not be hot, or the egg will curdle. Add an egg and mix thoroughly to evenly incorporate.

Wash chicken fillet, pat dry, and cut into small cubes. You can use thigh or drumstick meat, deboned.

Heat vegetable oil in a skillet. Fry the onions, stirring occasionally until nearly soft.

Add chicken to the skillet and cook until done, stirring occasionally. Season with salt, Provencal herbs, or any spices to taste.

Separately, fry mushrooms in vegetable oil, lightly salt, and cook until moisture evaporates.

Combine the fried chicken and mushrooms and mix well.

Grease a baking dish with butter. Spread half of the mashed potatoes evenly.

Spread the chicken and mushroom filling evenly over the potato layer.

Cover the filling with the remaining mashed potatoes and smooth the surface.

Grate cheese on a coarse or fine grater. Any cheese is fine: hard, processed, mozzarella – your choice. Cheese gives the main flavor to the topping.

In a bowl of suitable size, beat the egg with sour cream until smooth.
