Cherry Kefir Cake Baked in the Oven

Preparation
Step 1
If cherries are frozen, remove them from the freezer in advance; if fresh, pit them. Kefir can be any fat level but is best at room temperature.
Step 2
Drain cherries in a sieve so excess juice does not make the batter too wet.
Step 3
Crack eggs into a bowl. Always wash eggs before use to remove harmful bacteria from the shell. Beat them with a mixer, gradually adding sugar. You can reduce sugar to taste.
Step 4
Beat eggs until fluffy and light. Then add kefir and gently mix on low speed.
Step 5
Mix baking powder into the flour.
Step 6
Sift flour into the egg mixture to aerate it, making the cake fluffier. Stir until smooth; a hand whisk is enough.
Step 7
Check the batter consistency - if too thin, add more flour. This depends on kefir thickness, egg size, and flour properties. Add by tablespoons, mixing well each time. The batter should be like thick pancake batter - dense but pourable. I added 2 extra tablespoons besides the recipe’s 1 cup.
Step 8
Grease a suitable baking pan (I used a 20 cm/8-inch round pan) with a small piece of butter. Pour in the batter and top with cherries.
Step 9
Bake in a preheated oven at 180°C (356°F) for 35-45 minutes. Exact time depends on your oven. Check doneness with a wooden skewer; it should come out dry.
Step 10
Serve sprinkled with powdered sugar. Enjoy!
