Cherry Compote with Pits

Light, simple, and perfect for the whole family! Cherry compote is the ideal end to a summer meal. Fragrant, rich, and beautiful in color, it's a crowd-pleaser. In winter, frozen cherries work just as well!

Step 1
If you like, add a pinch of citric acid for a brighter flavor and to preserve the vibrant color of the drink. You can use both fresh and frozen cherries.
Step 2
Carefully sort the cherries, removing stems, leaves, and damaged fruits. Rinse thoroughly and drain in a colander to remove all excess water.
Step 3
Take a pot of appropriate size. Use enamel or stainless steel cookware — avoid aluminum as the acid can react with the metal. Pour in filtered water, add citric acid and sugar. Bring to a boil over high heat, stirring to dissolve the sugar.
Step 4
Once the syrup boils, carefully add the cherries in small batches to avoid splashing or burning yourself. When it boils again, reduce the heat to low.
Step 5
Simmer the compote on low heat for about 15 minutes, stirring occasionally and skimming off any foam that appears on the surface.
Step 6
This cooking time is enough for the cherries to infuse the drink with flavor and color. Avoid overcooking, as the cherries may burst and make the drink look cloudy.
Step 7
The compote is ready! Serve warm or chilled, with or without pastries. Once cooled, store in clean glass jars or bottles in the refrigerator. Enjoy!
